Low-calorie cauliflower pizza crust

I LOVE pizza. I could eat it at any time of day. But we all know pizza is really, really dense in calories… 😭 No problem, there is a solution to have the best of both worlds. And that is the cauliflower pizza crust instead of the traditional dough.

Cauliflower is high in fibre, vitamin C and B-vitamins. It is low in calories (around 25 calories), so it can help in a weight loss journey. Plus, cauliflower is rich in antioxidants, which protect your cells from harmful free radicals and inflammation.

Ready to enjoy a delicious (and healthy) cauliflower pizza?

The ingredients you’ll need for…

The base

  • 1 cauliflower head for a pizza base
  • 1 egg
  • Seasoning (salt, pepper, Italian spices)

Toppings

  • 80g Tomato sauce with garlic and basil
  • A handful of spinach leaves
  • 6 cherry tomatoes
  • 1 small red onion
  • 2 slices of roast turkey
  • 60g Mozzarella

How to… 🍕

*Time to preheat the oven to 180-200° C.

Cut and wash the cauliflower head and chop it into smaller pieces. With a food processor or a blender chop it finely.

Place the cauliflower on a tea towel and let it sit for five minutes. Squeeze the cauliflower in the tea towel and drain as much liquid as possible.

In a bowl mix the cauliflower with a whished egg and add seasoning.

Line a pizza tin with baking parchment and mold your mix into a round form.

Once in the preferred shape, pop it in the oven until it turns golden (around 20 minutes).

Now you can get your toppings ready – wash, cut and try not to nibble them while you wait haha.

Once the base is looking crisp, take it out of the oven and evenly spread tomato sauce.

Add your preferred toppings (you can literally add any ingredient you love and make it your own).

Sprinkle enough mozzarella to cover your toppings and put the form back in the oven until the mozzarella is fully cooked (depending on your oven this can be 10-15 minutes).

It has four servings with only 116 calories per serving. Amazing, right?
